Image

Eric the EPICurean is a monthly blog series in which our very own talented chef, Eric Rasmussen, creates a truly EPIC meal. With the launch of our new Lamb Currant Mint bar, Eric created a recipe for Lamb Gyros (EPIC style).

What you’ll need:
8 pcs Romaine lettuce leaves
8 Lamb Currant Mint Bars (diced)
1-2 Spoons Tomato, Cucumber, Red Onion relish
1-2 Spoons Tzatziki sauce
1 tbl coconut oil (for sauteing)

Tomato Relish
1.5 Cups Cherry Tomatoes (Cut in halves)
1 Medium Cucumber
1/2 Red Onion (Diced)
Juice of 1/2 a lemon
Salt and pepper to Taste

To assemble – Peel and cut the cucumber in half length wise. Using a small spoon scrape out the seeds from the center. Once cleaned out cut the cucumber into a medium sized dice. Combine all ingredients together in a bowl and let set to marry the flavors (at least 10 Minutes).

The EPIC Lamb Gyros were adored by all! It was a splendid way to use the new EPIC bar as well as share nutrient dense food with friends and family. The Lamb Currant Mint bar adds a deliciously complex flavor profile to any meal. When compared to other recipes using EPIC bars, the Lamb bar creates a sense of sophistication and intricacy that you would expect to find at a traditional butcher shop. The range of the lamb bar is endless for your creative palate. It could be enjoyed equally on a charcuterie board, the star ingredient in Gyros, or alone, drizzled with olive oil and paired with your favorite glass of red wine. Heating the Lamb bars not only increased the tenderness but also changes the overall mouthfeel and savoriness. It’s a sensory experience that will leave you craving more.
