Eric the EPICurean – EPIC Turkey Breakfast Tacos

Eric the EPICurean is a monthly blog series in which our very own talented chef, Eric Rasmussen, creates a truly EPIC meal. Being an Austin based company, we’re quite familiar with breakfast tacos. They are quick and easy to make, and the perfect on-the-go meal. This month, Eric delighted us with his own version of EPIC Turkey breakfast tacos.

What you’ll need:

EPIC Turkey Salsa
4 Cups of Water
5 Garlic Cloves
2 Dried Ancho Chilis
3 Dried Guajillo Peppers
1 Tbsp of Olive Oil
1/2 Yellow Onion (medium diced)
1/2 Green Bell Pepper (medium diced)
8 EPIC Turkey Bars
14.5 oz can of diced Tomatoes
2 Tbsp Cilantro (chopped)
Salt and Pepper to taste

To assemble – Start by adding the garlic, chilis, and guajillo to 3 cups of water. Cook for about 15 minutes, until tender, under medium heat. Let it cool down for a few minutes and then purée it down. On a sauté pan, add olive oil, yellow onion, and green bell pepper and cook until tender. Ground 8 Turkey bars on a food processor and pulse it until it resembles the texture of ground beef. Then add it to the pan with the onion and bell pepper mix. Sauté for 3-4 minutes and then add in the chili/guajillo purée and stir around to mix all ingredients. Add in a cup of water and let it simmer for 20 minutes. Finish off by adding in the diced tomatoes, chopped cilantro, and salt & pepper to taste.

EPIC Turkey Breakfast Tacos
1 Tbsp of Olive Oil
8 Eggs
1 Green Bell Peppers (medium diced)
1/2 Yellow Onion (medium diced)
1 Zucchini (medium diced)
EPIC Turkey Salsa
2 Avocados
8 Cauliflower Tortillas

To assemble – On a pan, sauté the peppers, onions, and zucchini for a few minutes. Add in the eggs and stir until they are fully cooked. Once heated, spoon equal amounts into each cauliflower tortilla followed by the EPIC Turkey Salsa and garnish with cilantro, sliced avocados, and chopped cherry tomatoes.

The EPIC Turkey Breakfast tacos were yet another great success! It not only makes for a quick and nutritious meal to take on your commute to work, but it’s also a healthy meal to share with friends and family. Using nature’s multi-vitamin, the egg, coupled with our protein packed Turkey Almond Cranberry bar, this recipe definitely lives up to our company motto: “Feed others as you wish to be fed”.
