EPIC Eats – Paleo on the Go

This month we are excited to feature a guest EPIC bar recipe from our good friends at Paleo On The Go! For those of you who are not yet familiar with POTG, let me explain.

Imagine coming home exhausted after a weekend long camping trip. You have pushed your body to its limits and have survived off of only EPIC bars in the wild. All you can think about is a hot fresh meal to nourish your mind and body. Lucky for you, at the door step of your home awaits a deliciously fresh paleo meal! So you’re probably asking yourself “How did gourmet paleo food arrive at my doorstep? That seems a little hard to believe.” However, Paleo On The Go specializes in this. Not only are the meals palate exploding delicious, but they are ridiculously convenient and easy to prepare.

EPIC Wrap with Roasted Red Pepper Sauce
What you’ll need:

  • 3-4 chard leaves (You can also use collard greens, they are a bit sturdier.  Look for large ones without any holes.)
  • 1 Beef Habanero Cherry EPIC Bar, diced
  • Roasted Red Pepper Sauce:
    3-4 red peppers
    1/4 cup walnuts, toasted
    1 Tbsp balsamic vinegar
    sea salt to taste
  • Riced Cauliflower:
    2 cups cauliflower, riced
    1/2 cup onion chopped
    1 clove garlic, minced
    olive oil
    sea salt to taste

To assemble – Roast red peppers until skin is charred. Throw in a bowl and cover with plastic wrap to steam the peppers. While they cool, use your food processor’s grating attachment to rice the cauliflower. Sauté onions in some olive oil until translucent. Add in garlic and cauliflower. Sauté together until tender. Set aside.

Peel skin off the red peppers and de-seed them. Combine with walnuts, balsamic vinegar, sea salt and blend until smooth. An immersion blender works well for this, or use your food processor again.

In boiling water, gently blanch the chard leaves for a few seconds then put into an ice bath. Dry off the leaves. You can also skip this step and use raw leaves if you wish.

Assemble your wrap like a burrito. Lay the chard out flat. Smooth on some red pepper sauce, top with cauliflower rice, and diced EPIC Bar. Fold over the sides, then roll up. You will have left over roasted red pepper sauce. It goes great with steak, chicken, or pork.

  1. I actually did just return from a week long backpacking adventure along the Continental Divide Trail where I essentially lived on Epic Bars for my daytime source of nutrition. I found myself fully refreshed and recovered each morning after 12 hour days of hiking. I credit your Epic Bars.
